Ingredients Chicken Taco Mix
- 1 lb. chicken cooked and shredded
- 4 tablespoons unsalted butter
- 15 oz white beans (1), rinsed and drained box
- 15 oz diced tomatoes (1 box)
- 15 oz white maize (1 box) drained
- 1 cup water
- 1 pkg taco seasoning or 2 for a stronger taste
Cheesy Topping Bisquick
- 3 eggs
- 1/2 cup sour cream
- 1 cup Bisquick
- 3 cup cheddar cheese divided
- 1/2 cup crumbled tortilla chips (stale is correct)
Instructions Taco Mix for Chicken
- If preparing raw chicken: Place chicken in a pot of boiling water and cook for 10-12 minutes, or until no longer pink inside. Place in a bowl to cool and then use two forks to shred into pieces.
- Preheat oven to 375 F. Spray a 9x13 baking dish with cooking spray.
- In a large skillet, melt butter over medium heat. Add shredded chicken and toss to coat. Cook for 5-7 minutes or until the butter is absorbed and chicken is fragrant.
- Add beans, corn and diced tomatoes in the pan. Pour taco seasoning in 1 cup of water, stir and drizzle over the other ingredients. Mix all ingredients together until smooth. Reduce heat and cover while preparing the next steps.
For the topping Cheesy Bisquick
- In a medium bowl, whisk together eggs and sour cream. Add Bisquick and whisk until no more clumps, then stir in 2 cups cheddar cheese.
Putting it all together
- Pour the chicken taco mixture into the baking dish from the bottom, spreading an even layer.
- Add filling Bisquick 1/4 cup at a time, spread with a spatula so that the liner completely covers the chicken tacos.
- Bake uncovered for 30 minutes.
- Remove from oven. Top with crushed tortilla chips and sprinkle with remaining 1 cup cheddar cheese. Cook for 5 minutes or until cheese is melted. Cool the pan 10-15 minutes before serving.
