White Chicken Taco Casserole

Ingredients Chicken Taco Mix

  • 1 lb. chicken cooked and shredded
  • 4 tablespoons unsalted butter
  • 15 oz white beans (1), rinsed and drained box
  • 15 oz diced tomatoes (1 box)
  • 15 oz white maize (1 box) drained
  • 1 cup water
  • 1 pkg taco seasoning or 2 for a stronger taste

Cheesy Topping Bisquick

  • 3 eggs
  • 1/2 cup sour cream
  • 1 cup Bisquick
  • 3 cup cheddar cheese divided
  • 1/2 cup crumbled tortilla chips (stale is correct)

Instructions Taco Mix for Chicken

  1. If preparing raw chicken: Place chicken in a pot of boiling water and cook for 10-12 minutes, or until no longer pink inside. Place in a bowl to cool and then use two forks to shred into pieces.
  2. Preheat oven to 375 F. Spray a 9x13 baking dish with cooking spray.
  3. In a large skillet, melt butter over medium heat. Add shredded chicken and toss to coat. Cook for 5-7 minutes or until the butter is absorbed and chicken is fragrant.
  4. Add beans, corn and diced tomatoes in the pan. Pour taco seasoning in 1 cup of water, stir and drizzle over the other ingredients. Mix all ingredients together until smooth. Reduce heat and cover while preparing the next steps.

For the topping Cheesy Bisquick

  1. In a medium bowl, whisk together eggs and sour cream. Add Bisquick and whisk until no more clumps, then stir in 2 cups cheddar cheese.

Putting it all together

  1. Pour the chicken taco mixture into the baking dish from the bottom, spreading an even layer.
  2. Add filling Bisquick 1/4 cup at a time, spread with a spatula so that the liner completely covers the chicken tacos.
  3. Bake uncovered for 30 minutes.
  4. Remove from oven. Top with crushed tortilla chips and sprinkle with remaining 1 cup cheddar cheese. Cook for 5 minutes or until cheese is melted. Cool the pan 10-15 minutes before serving.
